It's actually quite simple. For a cup of ZAÏ, you start with boiling approx. 250 ml of water. Take a pinch ZAÏ - as much as you can fit on a tea spoon - and put it in an infuser or tea egg. Pour the boiling water over the tea and wait for 5 to 10 minutes, depending on how intense you want it to be. In Greece it's common to sweeten it with some honey. In some regions they add some cinnamon, in others they go for lemon. Tastes vary!
ZAÏ is a high quality tea, so you can make a second infusion with the same tea portion. It will probably not taste as intense as on the first time, it depends how long it stayed in the water the first time.
Just play around a bit with amount and times and you will find your perfect preparation.
